Fry a couple of thinly sliced shallots in olive oil. Add avorio rice and let it too fry for a while. Add about twice as much liquid as rice, half the liquid being chicken stock and half white wine. Let simmer until no liquid flows into a hole made in the rice. Let stand under a lid for a while. Add thick slices of mushrooms fried golden and rather a lot of freshly grated parmesan to rice before putting on the lid. Clean and slice fillet of pork while repeatedly throwing the cats out of the kitchen. Fry slices. Make a thickish mushroom stew. Serve.
